First Watch Introduces Coffee Program With a Cause

Project Sunrise benefits the Mujeres en Café organization in Huila, Colombia

First Watch, the popular breakfast, brunch and lunch concept, has partnered with Mujeres en Café (Women in Coffee) – an organization of female coffee growers in the Huila department of Colombia, to launch its new coffee program. The new coffee, dubbed Project Sunrise, is now available in First Watch restaurants nationwide and will provide much-needed support to these women-owned farms.

Traditionally, the coffee growing industry in Colombia has been male-dominated. Due to the country’s decades-long civil conflict, many women in Huila lost their husbands, brothers and sons and have now taken over the family business. Together, they formed Mujeres en Café and embarked on a mission to create sustainable businesses that elevate the lives of their families and improve conditions in their rural communities.

The high-quality beans these women grow and harvest in Huila are exported to the U.S. and roasted by the experts at Royal Cup Coffee in Birmingham, Alabama, exclusively for First Watch. The restaurant company pays a premium for these single-origin beans, which will be relayed back to the women farmers in Huila to help improve their quality of life and help facilitate their operations.

“During our visit to Huila, we met groups of women in several villages who have dedicated their lives to producing great coffee. They are proud of their work and were eager to welcome us into their homes, walk us through their farms and share their stories,” said Shane Schaibly, corporate chef and VP of culinary strategy for First Watch. “Each year, we serve more than 8 million cups of coffee in our restaurants. Through Project Sunrise, that gives us 8 million incredible opportunities to support these hard-working women and their families in Huila in 2018.”

Schaibly spent months working with coffee growers and roasters to develop a coffee that would complement the complex dishes, flavors and textures found on the First Watch menu. To brew the perfect cup of herbal tea, Stephen Twining’s recommends you follow these 10 tips:

1. Clean as a whistle! Warm the inside of the teapot first with hot water, then pour it out. Always start each cup with a clean teapot and mug.

2. Use fresh cold water each time. Never reuse already boiled water, it’s best to start with freshly drawn cold water.

3. Never let the water over-boil (and refrain from using a microwave to boil your water). Stephen says, “I never let the water over-boil because in doing so, you will cause oxygen in the water to be reduced, making the tea taste ‘flat.’ So remember to remove the teapot from the stove as soon as it hits a boil.”

4. Pour the water over the tea bag. Place the tea bag in the mug first, then pour the boiling water over it.

5. Let the tea bag sit. Some people take this time to “dunk” or “squeeze” the tea bag. It is best to let it sit and allow the full-steeping process to occur.

6. Savour the herbal essence. The first thing you will notice is the herbal scent of the tea being released. Take a moment to savour the rich aroma!

7. Never judge a tea by its color. Next to be released in the process is the color of the tea. At this time, it is tempting to think your tea is ready but just wait a little longer!

8. Wait for the perfect taste. The flavor of the tea takes longest to develop, so make sure to allow the correct steeping time to fully extract the best flavor. For herbal tea, steep the bag for a full four minutes. For milder tea flavor, shorten the brew time. For stronger tea flavor, increase the brew time.

9. Customize your cup. The proper cup of herbal tea does not require any additions. The expertly blended herbs and flowers will provide all of the flavor you will need. However, some choose to add honey, sugar or a squeeze of lemon.

10. Enjoy! “The best cup of tea is the one you like the most,” says Stephen.
